Want a sweet treat without the guilt?

This #WeaknessWednesday you should try this simple recipe for flourless Sweet Potato Brownies! They are vegan, vegetarian, gluten-free, paleo. The list goes on!

Ingredients

1 cup mashed sweet potato

½ cup smooth nut butter

2 Tbs maple syrup

¼ cup cocoa powder

¼ cup chocolate chips (optional)

 

Instructions

  1. Preheat the oven to 350 degrees and grease a small cake pan/loaf pan
  2. In a small, microwave-safe bowl or on the hob, melt your nut butter with your maple syrup.
  3. In a large mixing bowl, add the mashed sweet potato, nut butter, maple syrup and cocoa powder and mix well.
  4. If using chocolate chips, stir them into the mixture.
  5. Pour the mixture into the greased pan and bake for 20 minutes or until cooked through. Remove from the oven and allow to cool
  6. Try to share with your family however you may want to eat the whole batch!
